This bread is the perfect accompaniment to Caesar Salad or any variety of your favorite chili. But honestly, you will find yourself wanting to munch on the bread alone. . .like the "bad ol' days" when you polished off a bag of Doritos in front of the TV.

Ingredients:
2 cups almond flour
1 teaspoon kosher or sea salt
2 teaspoons chipotle chili powder
1 teaspoon baking powder
8 oz. organic (preferably raw) old cheddar cheese, grated
1 organic free range egg
Preparation:
1. Combine all dry ingredients (including grated cheddar) in a bowl.
2. In a smaller bowl, whisk egg; then combine it with the dry ingredients.
3. Knead the mixture with hands to ensure proper distribution of ingredients. The "dough" will form a ball.
4. Form the dough into a large circle about 2/3 inch thick.
5. Cut circle into 16 slices.
6. Place slices on parchment or silpat lined baking sheet.
7. Bake at 375 degrees for 9 - 10 minutes.
8. Open the oven door, turn off the oven, re-close the oven door, and leave the bread in the oven for another 7 - 10 minutes. (If you like a softer consistency, remove the bread when the initial 10 minutes has elapsed.)

Lin...I made this tonight in place of the "traditional" croutons with an organic chicken caesar salad (homemade Caesar salad dressing from the MLNP book). It was awesome! (and spicy...I love spicy) We definitely need to share this one with the ML network!

ReplyDeleteMe again ☺ I see that throughout your blog you have recipes that contain xylitol. It it okay to use this if I am on the healing diet? If so, could you tell me which brand to use and where you buy it?

Xylitol is ok to use on the healing diet, although I am NOT a fan of it. You only have to look at it to see that it is more highly processed than Stevia. Some of it is made from corn by-products, and that makes me very suspicious about it's efficacy as a healing diet staple. There are a couple of recipes for which I actually recommend Xylitol, but for the most part, I prefer Stevia. I am not a nutritionist. I know that many people do very well on the Healing Diet using Xylitol. I also know that I, personally, do not feel well after consuming it. Xylitol can be found in health food stores.
ReplyDeleteThanks for your insight Lin. I have used xylitol in a lemon square recipe and have had no ill effects gastrically speaking. I will try making the same recipe with spoonable Stevia and see if it turns out.
